Bolognese
Ingredients:
2 tbsp olive oil
2 Small Onions (Diced)
2 Carrots (peeled and diced/grated)
1 Red Pepper (Diced)
500g Beef or Pork and Beef Mince or mixed
2 tins Chopped Tomatoes or large jar of Passata
1 Beef Stock Cube
2 tbsp of Tomato Puree
3 Garlic Cloves
1 TSP each of Salt, Pepper and Sugar
Herbs: Oregano or mixed Italian herbs
Method:
Put oil in the pan on a medium - to - low heat. Once the oil is heated, add the chopped onions, peppers and carrots and fry with the salt and sugar until all the liquid has gone and they’re starting to catch on the bottom. Now add the mince and cook until browned also. Browning everything each time, all adds layers of flavour.
Add the pepper and garlic to the mince and fry for a further 2-3 mins. Add the tomato puree and mix well.
Add the Chopped Tomatoes/Passata, the stock cube and the herbs. Use a splash of red wine if you wish. Mix well, add the herbs then let it simmer for an hour.
Bolognese is often better when left overnight or it also freezes very well. You can batch cook this and freeze, with pasta, in portions for when you have nothing else in or simply can’t be bothered cooking!
Cook pasta according to instructions, serve and enjoy.
