Chop up fresh tomatoes, red onion, peppers and fresh or dried herbs like oregano or basil and add a sprinkle of sugar and salt, lemon juice and some olive oil and mix.
You can add extra veg like grated carrot or courgette, fruit like pomegranate seeds or chopped up figs, basically anything you have left in your fridge!
This is also the combo I’d use for salsa but I’d add cumin seeds and a dash of white wine vinegar and obviously chilli in either flakes, fresh or a dash of chilli powder.
Slice a baguette in either half long ways and make long slices or small discs by cutting it across, toast these in the oven for a few minutes and you can rub fresh garlic cloves over the toasted bread to make it extra garlicy.
