For each egg you use you need 2oz of marg/sugar/self raising flour. For an 8 inch tin, use 3 eggs and 6oz of each.
You can mix with a spoon, electric whisker or food processor. Just add all of it together and mix if using an electric appliance.
If mixing by hand, beat together the sugar and marg until it’s light and fluffy and is pale in colour. Add the eggs and then beat until they’re incorporated and then add the flour.
Place it into a lined tin and cool for 30 minutes or until you can skewer the middle and it comes out clean.
You can also use this mixture to make buns and you can make these into different cakes like chocolate cakes by adding cocoa powder (replace some of the flour with the cocoa) or by adding lemon zest (make the lemon juice into a syrup by adding sugar and then pour over the top of the warm cake) or chocolate drops or banana.
