Carrots 1kg

2 Onions

1 Sweet Potato

1 Stick of Celergy

Oil Salt pepper and sugar

Tbsp coriander seeds

Bunch of fresh coriander

2 stock cubes

Water


Fry seeds in oil until they pop and fizz and fry onion and celery with salt and sugar until golden and caramelised then add sweet potato and carrots and cook until any liquid has gone.


Add the whole bunch of coriander


Add 1 pint of water and whizz up. You may need more water and you can also add some milk or cream here to make it extra creamy, season to taste
