6oz Self Raising Flour

Teaspoon of baking powder

2 Eggs

1 oz Marg.Butter

1 tsp Baking Powder

1 tsp Mustard Powder

1tsp Salt

Pepper to taste

Chives

4oz Cheese Strong Flavour

Spring onion for the top


Put 1 egg and milk into a measuring jug and beat together

Weigh out the dry ingredients and chives if using and the butter/marg in a bowl and rub together until the butter is not in lumps, it should look like breadcrumbs.

Add most of the cheese (leave some for the top) to the dry mix and stir together then add the wet ingredients to form a ball of dry dough. Lay out a floured surface and roll with a rolling pin or pat down into a flat circle to 1 ½-2cm thick. 

Cut out with a small cutter (don't wiggle or twist as you do this as it can stop the scones from rising) place on baking paper on a baking tray, egg wash with the other egg and add cheese, onion and chives then bake at 200 degrees for 10 minutes.
