4 medium potatoes peeled and boiled until fork ready then chopped into small pieces. You can also use a bag of cubed or grated, frozen potatoes/hash browns for this
2 cups of grated cheese
2 cups of cornflakes
100g melted butter
2 cups of sour cream
Tin of condensed cream of mushroom or chicken soup
Fried crispy onions either bought or you can caramelise your own large, chopped onion
Large, shallow casserole dish
Mix together everything but the cornflakes and butter which you need to mix together in a separate bowl. Add the buttery cornflakes to the top of casserole dish and bake in the oven at 170 degrees for about 40-50 mins
