Sweet Potato
Slice peeled (or unpeeled) sweet potato into a 1cm (or less) rings/discs
Fry in oil on a medium heat with a lid, for about 5 minutes.Keep turning to achieve even browning.
Once it has started to soften, add ½ a cup of hot water with ½ or a full stock cube in with some chopped/minced garlic and lower the heat, replace the lid and still keep turning until soft all the way through.
Serve alongside a main course (as a side) or lovely as a light lunch with a fried egg and some spicy sauce.
It would work well with potatoes too.
